Pineapple Mango Salsa

Mango Chicken

Lemon Crinkle Cookies

Mom's Famous Hummingbird Cake


*Vanilla extract not pictured

Ingredients:

3 cups flours
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1teaspoon cinnamon
3 eggs
1 1/2 cups oil
1 1/2 teaspoon vanilla
1 8 ounce can crushed pineapple (undrained)
2 cups chopped pecans (1 cup for cake, 1 cup for frosting)
2 cups chopped bananas

Prep:

Preheat oven to 350 degrees

-combine flour, sugar, salt, and soda and mix



-add cinnamon



-add eggs, oil, and vanilla

-stir until moistened (do not beat)



-stir in pineapple and pecans



-chop bananas

-add to bowl and stir



-dust a 9 inch cake pan with flour

*To dust, place 1/2 cup flour in cake pan, step outside and hit the side of the pan with your palm until all sides of the pan are lightly covered.



-place cake batter in pan

-bake for 25 to 30 minutes or until done



-once the cake is done remove from oven and let cool in pan for 10 minutes

-insert a metal spatula or knife(touching to the bottom), going around all sides of the cake to release it from the pan

-place cooling rack over cake and flip over

-let cool for 10 to 20 minutes





Frosting Ingredients:

1 stick butter
1 8 ounce package cream cheese
4 to 5 cups confectionery sugar
1 teaspoon vanilla
1 cup of remaining pecans

Prep:

-place butter and cream cheese in small bowl and mix

-add vanilla and sugar

-mix until smooth (frosting should be thick enough to stand on its own)



-spread frosting on cake

-sprinkle pecans on cake
